Grilled Aubergine Mash | Pura bengena Pitika

Charcoal Grilled Aubergine, most commonly known as (Eggplant/Baingan in Hindi/ Bengena in Assamese) is favourite side dish of all Assamese.
Its quick, healthy , tasty and yes without spice in just 3 steps.
Ingredients:
1 Eggplant
1 teaspoon Musturd Oil/ Canola oil
1 medium chopped onion
2 teaspoon freshly chopped coriander
2-3 green chillies
Salt as per taste

Method:
Grill the Aubergine and Green Chillies in direct fire. Since, traditional charcoal is not available in cities, I prefer roasting it in Gas.
Place the the aubergine in a bowl of water (so that the skin comes out easily while peeling)
Peel the skin and mash it finely with freshly chopped onions, coriander, oil , grilled green chilli and salt.
Pura Bengena Pitika is ready!
